Strawberry Cheesecake Bites

March 2, 2012

I am new to Pintrest. I have done some searching  but still am trying to figure out how to pin or repin items. Maybe soon! If I have a little more time to sit and figure out the site! :-)

I did find a recipe that I knew I had to make!!!

Here is a simply beautiful, elegant, easy to do dessert.  Make these for your sweetheart or to impress your friends.

The Ingredients:
-1 lb large organic strawberries
-8 oz. organic cream cheese, softened
-1/2 tsp – 1 tsp spoonable stevia (this is to taste so sweeten it to your liking)
-1 tsp vanilla extract
-lightly toasted almond flour (watch it very carefully, it will brown quickly!)

The Directions:
Rinse strawberries and cut off the very tip of the strawberry so that it will stand up.  Remove the green top and scrape out a hole with a paring knife. .  Prep all strawberries and set aside.
In a mixing bowl, beat cream cheese, stevia, and vanilla until creamy. Add cream cheese mix to a piping bag or ziploc with the corner snipped off or simply spoon it in with a small spoon. Fill the remaining strawberries with cheesecake mixture. Dip the filled strawberries in the toasted almond flour.

Refrigerate until serving.

I also made some PALEO friendly version!

In a mixing bowl, beat softened Coconut Butter, stevia, and vanilla until creamy. Add cream cheese mix to a piping bag or ziploc with the corner snipped off or simply spoon it in with a small spoon. Fill the remaining strawberries with cheesecake mixture. Dip the filled strawberries in the toasted almond flour.

Cheesecake is a dessert consisting primarily of a mixture based on soft, fresh cheese (not always cream cheese), eggs, and sugar; often on a crust or base made from hard biscuits (such as a graham cracker crust), pastry or sponge cake.[1] It may be baked or unbaked. Cheesecake is usually sweetened with sugar and may be flavored or topped with fruit, nuts, fruit sauce and/or chocolate. Various flavours of cheesecake exist, such as lemon, strawberry or toffee..
