Butternut Squash Lasagna

Don’t have much time today… Here is a delicious way to make Lasagna. Another way that we enjoy lasagna in the summer is with zucchini. The butternut squash gave a little sweet taste! :)

The Ingredients:

1 lb Chicken sausage
1 medium/large butternut squash
1 can tomato sauce
1/2 cup Roasted Red Pepper (I used jar because I was out of red bell pepper)
3 cloves garlic, minced
1/2 medium sweet onion, diced small
basil
Sea Salt and Pepper

The Directions:

Peel and cut your butternut squash into half. Scoop out seeds and then cut the bottom seed half off. Slice thin pieces long ways. I had 10 thin long pieces and then I cut the bottom half pieces into thin slices.

In a skillet warm up the chicken sausage for 3 minutes.  Add garlic and onion and cook for 5 more minutes.

In blender mix red bell pepper, tomato sauce and basil. Fresh Basil would have been great but I only had dry. (looking forward to having fresh again!!!)

In a 9×13 pan line the bottom with just enough sauce to cover. Add a layer of Butternut Squash and top with all chicken sausage. Add another layer of butternut squash and then pour remaining sauce over the top.

Bake at 400 degrees for 45 minutes.
