Cabbage “Not” Rolls
Our 4 year old had his first baseball practice last week. He was very excited all day. The day was crazy. We had an extra kid around all day! (I occasionally babysit) My oldest, who had been napping, did not nap. We were outside 75% of the day. I had a cabbage in the fridge that needed to be used ASAP so I was planning on making cabbage rolls but really did not have the time.
INTRODUCING my Cabbage NOT rolls!
All the delicious-ness of cabbage rolls! I did not have to fuss with the process of rolling each roll and laying them in the dish and baking. It was a one pan dish!!!
This dish even passed with the in-laws!!! They both loved it!!! This was such a hit with everyone in my family!
The Ingredients:
1 – 1 1/2 lb ground beef
1 Onion, medium dice
3 cloves minced garlic
1 head of green cabbage, chopped
1 can of diced tomatoes (I chop mine because hubby likes smaller tomatoes)
1 cup tomato sauce
sprinkle or two of parsley and basil
salt and pepper to taste
The Directions:
1. Brown the meat with the onions and garlic
2. Add the remaining ingredients and stir to combine
3. Put the lid on it and let it simmer on low for an hour
Can serve with Cauliflower rice or Quinoa but we enjoyed ours as is!
