Chicken and pearl onions
This past Thursday, Friday and Saturday I held a garage sale. As much as I had fun selling our junk, no longer needed, out grown clothes, shoes and toys, I am so glad that it is OVER. Hubby ended up needing to work Friday and Saturday, it was me and the boys.
Let me tell you 3 little boys and a garage sale —- NOT such a good idea. It was challenging but in the end, we sold and gave away clothes, toys, etc. I sold Thursday, Friday and Saturday and then whatever did not sell I took to Goodwill on Saturday. It feels good to rid myself (our family) of the JUNK!
GLAD IT IS OVER!!!
Now onto food!
Joshua (4 year old) likes eating drum sticks because Phineas and Ferb eat drum sticks in one episode. Last time we were at the store, he spotted drum sticks and requested I make some, so I did!!!
The Ingredients:
5 drum sticks
1 pkg boneless Chicken thighs (5 pieces)
1 frozen pkg of pearl onions from Trader Joes
6 cloves garlic, minced
2 TBSP Olive Oil
2 TBSP Mild/Hot sauce
The Directions:
Preheat oven to 350 degrees.
In a frying pan, heat up Olive Oil. Once pan and oil are real hot add chicken, but do not crowd. Chicken does not cook well when crowded. I was able to do 3 pieces of chicken at a time. Let chicken brown on each side before turning. I did about 2 minutes on each side. Once chicken is browned on all sides set aside in a 9×13 cooking dish. Continue to cook all the chicken. Once the chicken is done, add the pearl onions and garlic to the frying pan and let cook in the brown pieces the chicken left behind. After a couple of minutes, add the onions and garlic to the chicken in the 9×13 dish. Add seasonings to the chicken and onion.
Bake Chicken at 350 degrees for 25-30 minutes or until chicken is no longer pink!
ENJOY! We served our chicken with Spinach and Almonds and Carrot/Parsnip Rounds.
