Avocado Egg Bake

I am sorry that I have not posted this week! I have family in town and we have been busy!

Last week, I made hubby and I these delicious Avocado Eggs Bakes. 

These are super easy and a nice switch up from normal scrambled eggs.

Preheat oven to 425 degrees.

Cut avocado in half and then scoop out a bigger hole in the middle of each half. Then I separated the egg white and yolk. Putting the yolk into the avocado and the white into a glass dish. The reason I did that was because I was not sure how much the avocados would be able to hold. I then carefully added the egg whites. Bigger avocado pits held better. Bake in the avocado and egg until egg is cook how you desire! I cooked ours for 7 – 10 minutes! But watched it carefully!

 

Hubby topped his with Frank’s hot sauce. I did a tiny bit of salt and pepper.
