Coconut Chicken Strips
Operation get the boys back on board! After vacation and mommy away time, the boys are needing a little guidance to making healthy choices! Yes, I make their meals but they have shown a little resistance with what I am making. I thought I would make something new and something fun!! They enjoy chicken and these coconut chicken strips are healthy and full of greatness! They boys thought they were eating chicken nuggets!
Here is a quick and delicious recipe for chicken finger type chicken with 3 ingredients!
Coconut flakes, unsweetened
In a large bowl add chicken strips. In a small bowl whisk eggs and then pour over the chicken. Mix the chicken around in the bowl in eggs. Once the egg is mixed around on all the chicken add the coconut right into the bowl. I used about a 1/2 cup of coconut but you can use more or less depending on the amount of chicken!
Bake at 350 for 25 – 30 minutes or until the chicken is cooked completely. The coconut will brown which is great!
