Summer sausage and cabbage saute

Wow, I apologize. This just haven’t seemed to slow for us here and it is looking like it is only going to get more busy! FUN! I love being busy and my boys thrive when they are busy! :)

Monday night, I made this delicious but spicy Summer sausage and cabbage saute dish. It was super good but I made it a little too spicy! Funny story, I usually just season my food by taste. That night was no different! Although, lesson learned! I forgot to check to see if the guard was on. I just sprinkled away and boom – a big blob of spice came out. I scooped out some but the damage was done!

Hubby and I enjoyed it but we knew they boys would not. They got to eat egg and an avocado each for dinner, which they loved!

The Ingredients:

Summer sausage 3 foot long strips (Farmer gave me it to try so it was not labeled)

1 onion, minced

1 head of cabbage, finely chopped

1/4 tsp cayenne pepper (I did about a 1/2 – 1 tsp worth)

1/4 tsp black pepper

to calm ours down I added a small can of tomato sauce

The Directions:

Saute onion and cabbage in a small amount of Olive Oil. Add seasonings. Since the summer sausage was already cooked, I just sliced it and added it to the cabbage. Cook until the summer sausage is warm/hot! If you want to use tomato sauce add now but hubby enjoyed his without sauce.
