Brussels Sprouts and Blueberry Saute
While I was in California visiting with my brother and celebrating his graduation, I had a delicious Brussels Sprout salad. Don’t you worry I am going to attempt to recreate it! But let me tell you. That salad was amazing.
It has been several weeks since I have had brussels sprouts or have bought them. I have missed them!
Yes, I have an EXTREME love for brussels! I do!
I usually bake or broil my Brussels. It is just easy and with kids. Plop them in the oven and forget about them for 30 minutes or so. I was our of coconut aminos and was wanting more of a lite, simple tasting brussels sprout. This was a huge success! Boys loved them and I enjoyed the leftovers for breakfast.
The Ingredients:
1 bag of Brussels Sprouts
1/2 yellow onion, small diced pieces
2 large garlic cloves, minced and smashed
2 slices of bacon (pork, beef or turkey), cut into small pieces
1/2 – 1 fresh blueberries
1 TBSP Olive Oil
few shakes of pepper
The Directions:
Saute onions and garlic in Olive Oil. While sauting, cut brussels sprouts. Cut ends off and then into 1/4′s. (you want small pieces) As onions begin to turn clear add the Brussels Sprouts. Cook for another couple of minutes and then add the bacon pieces. Keep stirring. Add a few shakes of Pepper. Add 1/2 – 1 TBSP of coconut oil and blueberries. Stir well and continue to cook until the blueberries are warm.
ENJOY!!!
Great as a side dish of served with eggs!
