Sauteed Zucchini

I love summers! I love that every Wednesday end of June – August I get a large bag of zucchini/summer squash. I love that I get to try all sorts of new recipes!

Here is another recipe to add to my zucchini recipe list!

The Ingredients:

2 medium size zucchinis
1 – 2 tsp nutmeg
1 -2 tsp garlic powder
1 – 2 tsp pepper
1 TBSP Coconut Oil

The Directions:

Cut zucchini into small thin strips. I added zucchini to a pan that had ground beef fat in it. Cook zucchini on medium heat. Let zucchini brown and start to soften. After 5 minutes stir around the zucchini and let brown on other sides. Add nutmeg and garlic powder and pepper. Mix around the zucchinis. Add Coconut Oil when the fat seems to be absorbed into the zucchini. Cook until zucchini is tender.
