Summer Berry Bars

This recipe is might be our families new favorite summer dessert/treat!

Last week we received these delicious blackberries from our CSA. These blackberries were so tender and so juicy, they were just begging to become a special treat! Last year, I made a simpleĀ Blackberry Cobbler, which was (and still is) delicious!!!

As good as the cobbler was, I knew I wanted to come up with something new and something easy.

After looking around in my pantry, this is what I came up with!

The Ingredients:

Crust:
1 cup Walnuts
1/2 cup Unsweetened Shredded Coconut
1/2 cup Almond Flour
8 dates
1/4 cup Coconut Oil

Topping:
6-8oz Blackberries
6-8oz Blueberries
few shakes of cinnamon
1/4 cup Coconut Cream (warmed, not melted)
1/4 cup Maple Syrup
dash of salt

The Directions:

In a food processor add the Walnuts, Almond Flour, Shredded Coconut and begin to pulse. Once the Walnuts are in small pieces add the coconut oil. Pulse a few times and then add the dates. Pulse until dates are at desired size.*

In a 9×9 glass baking dish add parchment paper. Add the nuts and spread our evenly with your hands and press firm.

Rinse out food processor and then add all the filling/topping ingredients. Mix well! ** Pour mixture on top of the nuts. Spread out evenly and then place the glass dish in the freezer. This will allow the topping to harden. Cut into pieces and enjoy!!!

*I left mine dates in small chucks. You can mix them until they are real thin or leave them in small pieces!

** Next time I think I am going to try to cook the mixture on the stove topĀ to see if it is more like a jelly and more firm. But we really enjoyed them!!!

    We enjoyed these for breakfast this morning! I used strawberries because it was all I had. The kids loved it!
