Taco Salad

Sunday is my new prep day! I grilled 5 chicken breasts, cut up 3 into small pieces for my chicken salad dish that I am making tonight for dinner and then sliced 2 breasts for lunches for my husband or kids. I made a brussels sprout hash (sweet potato, brussles and red onion), and I made a new waffle recipe for the boys (cocoa banana waffles, recipe to come). It feels great to be so prepared for the week. Do you prep food on Sunday?

Sundays dinner – TACO SALAD!!! I do not know if I have started something new or if it is more of a clean out the fridge dinner but we have enjoyed Taco Salad the last two Sundays! It is super easy. It is something to prepare before. It is something you can reheat and enjoy throughout the week for lunches.

This week here is what I did.

The Ingredients

ground beef

1/2 cucumber, cut small

1 avocado

1 tomato

1/4 cup salsa

The Directions:

Brown ground beef. Add seasonings (garlic powder, chili powder, nutmeg, paprika and a tiny bit of cinnamon). Let meat cool. In another bowl add all the other ingredients and mix well. Add ground beef and mix again.

This is good alone or you can add it to a big bowl of salad.
