Chicken Salad

Chicken Salad and Summer just go hand and hand. It is something nice to have ready in the fridge for lunch or to snack on. My family are huge fans of the typical chicken salad (chicken, celery, apple and a nut of some sort). This week I was bored of the go-to chicken salad and needed something new.. This was perfect!
Hubby sort of gave me the idea, thanks babe! He loves mixing chicken and other ingredients into one bowl and eats it all mixed up. One bowl/dish also makes lunch/dinner easier with the boys.

A few weeks ago we had chicken, sweet potatoes and green beans. Hubby mixed them all to together and that is when it happened… light bulb!

The Ingredients

3 – 4 chicken breast, cut into small pieces
2 medium/large sweet potatoes
2 chicken sausage links, cut into 4′s
1 – 2 cups frozen green beans
1 cup onion, diced
mayo
few squirts of yellow mustard
few squirts of dijon mustard

The Directions:

Preheat oven to 350 degrees. Peel and chop sweet potatoes into small pieces. Lay out on a cookie sheet and cook sweet potatoes for 20 – 30 minutes. When the sweet potatoes are done set them to the side.

Peel and chop 1 cup of onion. In a large skillet add 1 TBSP Coconut Oil and begin to saute the onions on medium low heat. Begin to wash and cut chicken into small pieces. (I cooked my chicken the day before!) Before the onions are done add the chicken and begin to cook.

Since, I had already cooked my chicken, I just added the chicken until the pieces warmed up and continued brown.

Once chicken is done add sweet potatoes to the skillet and mix around. Add in the frozen green beans. Mix green beans in and allow the green beans to cook. As soon as the green beans are cooked, remove from heat.

I then added some spices (mustard powder, rosemary, oregano, garlic powder and dill) and added mustards and mayo.  Mix around and make sure everything is covered and seasoned. I ended up using maybe a 1/4 – maybe more of mayo. Taste the chicken salad and then add salt and pepper if needed. I did not need to add any salt.

This chicken salad is good cold or warm! We enjoyed it both ways! I hope you enjoy it too!

    Love the sweet potato in there! Never thought to add that to a chicken salad
