Chicken Meatloaf

I love making new variations of meals that my family already enjoys. Our middle boy loves meat and meatloaf/meatballs are one of his favorites. He really enjoys them! :)

This week I decided to make meatloaf with ground chicken. I love ground beef meatloaf better but this was really good and everyone seemed to really enjoy it as well!


The light silver pan has less wing sauce and no onions. I did make a double batch.

The Ingredients:

1 – 1 1/2 lb ground chicken
2 – 3 stalks of celery, diced
1/4 – 1/2 onion, diced
1 egg
2 – 3 TBSP Coconut Flour
2 – 4 TBSP Wing sauce
Garlic Powder and Pepper and Cayenne Pepper

The Directions:
Preheat oven to 375 degrees.

Place all ingredients in a bowl and use your hands to mix thoroughly. Plop mixture into one large loaf pan.  Bake for 25-35 or until chicken is completely cooked through.

***Poke the meat, if it sinks in, like it’s uncooked, it probably is.
