Pineapple, Sweet Potato Chicken Salad
I am preparing for another weekend away camping. This will be our families third weekend in a row camping. This weekend we are heading to Turkey Run State Park for some hiking and also to visit our CSA farm!
I am really excited to go on the Farm Visit. We have been apart of this CSA for three years now and I have never gone and visited the farm. The two past years we had things going on and we were not able to go
So, I am really excited that it is going to work this year! I am also excited for our boys to see where our vegetables come from and who grows our vegetables. I am really looking forward to the Farm Visit!!!
Before we going camping I make some dishes that will help us continue to eat healthy. Last week, I made this delicious Pineapple, sweet potato chicken salad. Interesting, I know but real good!
Chicken Breast ( I did 4)
1 – 2 sweet potatoes
1 cup of pineapple (fresh or canned), cut into pieces
mayo
salt and pepper
The Directions:
Cook chicken however you like. I either bake or grill mine and most of the time use leftover chicken!
Cut Sweet Potato into cubes and bake at 350 degrees for 20 – 30 minutes. Set aside and let cool.
Cut Pineapple into small pieces.
Mix everything together. I always start with a little seasoning and add more after tasting.
