Blueberry Chocolate Chip Waffles
This year our oldest started Preschool for 3 days a week and our middle boy started going 2 days a week. Since, this was the first time for our middle boy to go to school, I decided on making a special breakfast for them, Blueberry Chocolate Chip Waffles!

Here is their special FIRST day treat!
The Ingredients:
1 banana
3 eggs
1 cup unsweetened, carton coconut milk
1 cup unsweetened shredded coconut
1/3 cup almond meal
1/4 cup coconut flour
1/4 cup coconut oil
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
2 cups blueberries
1 cup Enjoy Life mini chocolate chips (Optional)
The Directions:
Mix all ingredients together in a food processor, except the last 2 ingredients. If you do not have a food processor, mash up your banana until it is creamy, then mix together the rest of the ingredients with a large spoon or hand mixer.
After you have made your batter in your food processor, pour it into a bowl and add your blueberries and chocolate chips and mix well to combine.
Now heat up your waffle iron and pour into your waffle iron (only add oil to coat if it is not a non stick waffle iron). Let cook. These take a bit longer than normal waffles so let them cook and poke at them a bit to see if they are done. I like to use a fork to try to lift them a bit out of the waffle iron. If they fall apart, surprise surprise, they’re not done.
This recipe did not freeze well… Well, The kids preferred them fresh over the leftover freezer ones.
