Bacon Chocolate Chip Cookies

Hubby celebrated his 30th birthday in September!! The boys and I were feeling extra loving and decided to make him some cookies and take them into his work for everyone to enjoy! Yes, it was kind of like being a little kid and having your parent bring in a treat! :) ha!

I have been eyeing The Food Lovers Bacon Cookies. As you know, I DO NOT EAT BACON… But I knew that these cookies would be a special treat for my sweet hubby! I bought Bacon.  {SHOCKER!!} and I cooked the bacon {get up off the floor!! I know, SHOCKER*!} and made these cookies for my hubby!

I did NOT try these cookies but everyone who has had them ENJOYED them and is begging for the recipe! :) I did make some changes…

The Ingredients:

  • 1 tsp Baking Soda
  • 1 tsp Sea Salt
  • 1 tsp Pure Vanilla Extract
  • 1.5 cup Chocolate Chips (I did Dark Chocolate {hubby LOVES dark chocolate})
  • 1/2 cup Coconut Oil
  •  1/2 cup Maple Syrup
  • 1 TBSP local Raw Honey
  • 2 eggs
  • 3 cup blanched Almond Flour
  • 5 – 7 pieces bacon, raw {hubby wants me to add more bacon next time}

The Directions:

Preheat oven to bake at 350°F.
In a medium size mixing bowl, toss bacon in ¼ cup maple syrup.
Lay bacon on a parchment-lined baking sheet. Bake for 20 minutes. Remove bacon from oven, and allow to cool. Crumble candied bacon for cookie batter.
{What I did}

Cook bacon on frying pan, like you would for breakfast. Cook until bacon is fully cooked and edges are just a little burnt. Remove bacon from pan and lay on cooking rack. Drizzle just a TBSP or so of maple syrup over my cooked bacon and let cool. Then crumble bacon for cookie batter.

Heat oven to 375°F.

In a medium-sized mixing bowl combine dry ingredients. In a small mixing bowl beat eggs, 1/2 cup maple syrup, and vanilla extract with a hand mixer. Pour wet ingredients into dry and beat with hand mixer until combined. Add melted coconut oil into batter, and continue to blend until combined. Stir in chocolate chips and cooked bacon.

Drop balls of dough on parchment-lined baking sheet, about a tablespoon in size. Bake cookies for 15 minutes at 375°F.

Let cool and serve.

p.s. I made these cookies for our neighborhood block party. I made 2 dozen and everyone enjoyed them. Not one person said they tasted healthy :) or lacking in sweetness. Everyone was raving about these cookies.

* For those of you who are new to enjoyinghealthyfoods.com, I do not eat bacon… I do not eat anything PIG. It makes me sick. This was HUGE of me!!!
