Paleo Dog Muffins

Last week, a friend of mine posted on FB that she too, was in a lunch rut. We all have that feeling. I too, have been feeling in a lunch rut. We usually eat leftovers {if hubby doesn’t take them all} or we eat what we have around! Lunch isn’t planned much. We are prepared for lunches but I do not have a lunch menu like I do for dinners! Most days it is a meat and veggies and a little fruit! We tend to eat similar things everyday. {boring, I know!} Sometimes my boys do not want leftovers. They want, as my 5 year old has begun to say “a normal” lunch. :) They want to eat what their friends are eating.

Back to my friend! Later that day {or was it the next}, she posted a link for GF corn dog muffins. My boys love corn dogs {slap on the hand!} Anyway – I was intrigued and knew that I had to try to make these with Almond Flour and Coconut Flour! It was a MUST!!!

I made the Almond Dogs on Thursday and the Coconut Dogs today! Both are super good! Boys LOVED them both! Please know that I even took a few to some friends to taste test! All said they tasted just like corn dogs! HORRAY!!! Even one of my biggest critiques enjoyed them! She will remain nameless! Double HORRAY!!!

Please try them out and let me know which one you prefer! I prefer the Almond Meal Dog!

NOTE: I cut my hotdog into toddler friendly size, but I have seen recipes that cut the whole hotdog into large pieces and stuck one hotdog in the center of the dough. It is up to you but I enjoyed more hotdog pieces throughout, instead of just in the center. Personal preference!!! :)

Almond Dog Muffins

Makes a dozen

The Ingredients:

1 1/2 cup Almond Meal
1/2 tsp baking soda
1/2 tsp salt
1/3 cup Raw Honey
4 eggs
4 hotdogs (cut in quarters)

The Directions:

Cut hotdogs into a toddler friendly size. I quartered mine!

Combine all the ingredients with an electric mixer until there are no lumps. Once everything is mixed well add hotdogs and mix in with a spatula.  Pour into a greased muffin tins.  Cook at 350 degrees for 25 to 30 min.

Coconut Dog Muffins

Makes a dozen

Ingredients:

2/3 cup coconut flour
1/2 cup butter (1 stick) (If you cant eat butter, mix coconut butter and olive oil)
8 eggs
1/2 tsp salt
1/2 tsp baking powder
4 hotdogs quartered

The Directions:
Preheat the oven to 400 degrees. Whisk together the coconut flour, salt, and baking powder. In another bowl, beat the eggs. Whisk in the melted butter. Add the coconut flour mixture to the egg/butter mixture and stir to combine. I used a Kitchen Aid to blend quickly until if formed a dough mixture. Add cut hotdogs and mix in with a spatula. Divide the batter amongst 12 greased muffin tins. Bake for 25 minutes or until golden browned. Take out of oven and let cool.

    I think it is important to note that actual DOGS should not be fed these muffins. Almonds are not good for dogs and I don’t know yet about coconut. But when I saw this on pinterest, I immediately thought this was a recipe for dogs. While you say my boys, it wasn’t clear until you said “I cut my dogs into toddler size pieces” that you were talking about human boys :) LOL. Anyway, I thought I’d mention it.

    @Rosie_D – Applegate Farms makes nitrate-free hot dogs with the option of organic or regular. And they taste great and are fairly easy to find.

    I made the almond version and my kids loved them! I was a bit skeptical, until I tried them! They taste better than the real deal to me! Thanks for sharing!
