Crockpot Pumpkin Chili
Happy Halloween!
For the past three or four years, I have made chili on Halloween. I think it is because it is something easy! You can have it on warm while you are out trick-or-treating with the kids and not worry about it.
Here is a great crockpot chili recipe!!! This was my first time adding ground beef raw but it worked out nicely! I threw everything in my crockpot and walked away! I added the green chili’s in around noon, only because I did not have any at home and since I was using plain petite diced tomatoes I knew it needed a little something extra!
Crockpot Pumpkin Chili
The Ingredients:
1 lb ground beef
1 yellow onion, diced
1 bell pepper (any color), diced
2 cloves garlic, minced
1 (14.5 oz can) diced petite tomatoes (fire roasted would be good too!)
2 (4 oz cans) diced green chiles
1 (15 oz can) pumpkin
1 cup chicken or beef stock
1 tbsp cinnamon
1 tsp chili powder
Salt and pepper to taste
The Directions:
Set your slow cooker to the low setting. Add all ingredients to slow cooker and stir well.
Cook on low for 7 hours, until meat is cooked through.
Almond Meal {corn} bread
The Ingredients:
1 1/2 cup Almond Meal
1/2 tsp baking soda
1/2 tsp salt
1/3 cup Raw Honey
4 eggs
The Directions:
Combine all the ingredients with an electric mixer until there are no lumps. Pour into a greased baking dish or muffin cups. This time, I used a round dark cake pan. Cook at 350 degrees for 25 to 30 min.
