Banana Muffins
This weekend I made two different kind of muffins. One was really fluffy and moist like muffins with grains. The taste, well, I need the recipe needed more honey. I am working on the recipe and will post when I figure them out! The other, a request from my boys!
Last night while tucking the boys into bed, they decided that they wanted Banana Muffins for breakfast. I knew I wanted to use my friends recipe, with a few minor changes! I am lucky to have a friend who enjoys sharing her creations with me! I had tried these muffins a few weeks back when she made them!
First – I used a food processor. I feel it really whips up the batter. The texture of these were 100% alike muffins with grain, in my opinion. Second – I added banana chucks back in at the end, that’s optional! Third – nuts would be great! We added Chocolate Chips {Enjoy Life} but nuts would be great with the chocolate!
The Ingredients:
1 cup Almond Flour
1 cup creamy Almond butter
2 eggs
3 medium bananas, must be spotty
1 tsp baking powder
1 tsp baking soda
Chocolate Chips (optional)
The Directions:
In a mixing bowl or food processor combine all ingredients and mix until the bananas are no longer visible in chunks. Add Chocolate Chips and I added small pieces of 1/2 banana and walnuts would be nice, too!
Pour batter into muffin tin. Bake at 350 degrees for 20 – 25 minutes. Bake until the center is hard to touch.

I just made these and they are great! I can’t believe they are grain free!
