Lemon Blueberry Bread
Thanks to a neighbor, I have a gallon size bag of fresh local blueberries in my freezer! I love blueberries and so do my kids! Last week, my oldest requested blueberry for breakfast and this is what I decided to do!
1 cup + 2 TBSP Blanched Almond flour
1/4 cup + 2 TBSP Coconut flour, sifted
1/2 – 3/4 cup honey
1/4 teaspoon salt
1-1/2 teaspoons baking powder
1-1/2 teaspoons vanilla extract
1 lemon zested and 1/2 lemon squeezed
1/4 cup + 2 tablespoons water
1-1/2 cups blueberries (I used Frozen)
Preheat oven to 350 degrees. Coconut Oil the inside of a loaf pan.
In a large bowl, combine almond and coconut flour, salt, and baking powder.
In a second bowl, combine honey, vanilla extract, eggs, and water. Stir to blend.
Add wet ingredients to dry and mix until uniformly moist. Fold in blueberries. Pour half batter into one pan and the rest in the other.
Bake for 35 minutes
