Paleo Pumpkin Donuts
Wow, I did not realize that I hadn’t posted since AUGUST. We have been adapting to our new normal, with one in kindergarten! We are learning to pack REAL FOOD lunches that don’t need to be warmed up. We are back to the basics of eating real foods. Most recipes and meals are somewhere on this site!
Last night, I decided to try out my new $2 find, a donut maker! Since it is fall and I am obsessed with Pumpkin in October and November, it was fitting to start with Pumpkin Spiced Donuts! One of my favorite sites, Primal Plate, posted a recipe last week, that I added to my must tries! I added a banana for my baby and also used maple syrup instead of maple sugar. Check them for the original recipe and make sure to check out their delicious frosting/glaze! Looks fantastic!!!
3/4 cup Pumpkin Puree
1/2 mashed banana (optional)
1 tsp Pure Vanilla Extract
1/2 TBSP Pumpkin Pie Spice
1/4 cup (or less) Maple Syrup
1 1/2 cup Blanched Almond Flour
1/4 cup Arrowroot Flour
1/2 tsp Salt
3 tsp Baking Powder
2 TBSP Coconut Oil, Organic, melted
Begin by mixing the eggs and pumpkin puree with a hand mixer. Mix until smooth. Add in the Vanilla and Maple Syrup and mix. Finally add the last wet ingredient, melted coconut oil.
In another bowl, mix together Almond Flour, Arrowroot Flour, Salt and Baking Powder.
Add the mixed dry ingredients to the pumpkin mixture. Mix until everything is mixed well.
Plug in your donut maker, and allow the temperature to rise for a minute or so. If using an oven, you will want to bake the donuts at 375 degrees.
Scoop a large spoonful or two of batter into a piping bag, and carefully pipe the batter into each donut mold. For fluffy donuts, be sure to really fill the mold.
Close the donut maker, and allow the donuts to bake for 3-4 minutes. Carefully flip your donuts with a fork, close the lid and bake for an additional 3-4 minutes. If baking in the oven, bake donuts for 12-15 minutes, being sure to start checking them at 10 minutes.
*I scooped out some of the mixture and added a half mashed banana for the baby!
